Free Authentic Mexican Soup RecipesChilled Avocado Soup Recipe1 Tbs butter Saute onion and garlic with butter in a small skillet over medium-high heat. Puree stock, green beans, onion and garlic in a blender or food processor working in small batches if necessary. Strain puree through a fine-mesh strainer and discard pulp. Add avocados and basil to puree and puree again. Stir in buttermilk, chipotle and lemon juice. Season with salt and pepper. Chill for about an hour. Yield: 4 servings |
