Progresso Tamale Parlor Authentic Mexican Food Recipes http://www.progressotamale.com "Serving Fine Mexican Food Since 1939" Chilled avocado soup recipe 1 Tbs butter 1/2 small yellow onion, chopped 1 clove garlic, chopped 1 pound frozen green beans, thawed 2 quarts vegetable stock 5 ripe avocados, peeled and quartered 1 1/2 cups fresh basil leaves 1 1/2 cups buttermilk 1 Tbs chipotle puree (from a can of chipotle chiles in adobo sauce) Juice of 1/2 lemon Salt and pepper to taste Accompaniment: avocado slices, corn Saute onion and garlic with butter in a small skillet over medium-high heat. Puree stock, green beans, onion and garlic in a blender or food processor working in small batches if necessary. Strain puree through a fine-mesh strainer and discard pulp. Add avocados and basil to puree and puree again. Stir in buttermilk, chipotle and lemon juice. Season with salt and pepper. Chill for about an hour.
