Authentic Mexican RecipesBean and Rice Tostada Recipe6 flour or corn tortillas Heat cooking oil over high heat in a small frying pan. Deep fry tortillas one at a time in the small frying pan. Drain tortillas on a paper towel. You can also use a deep fryer. Spread each tortilla with a Tbsp or two of refried beans as a base. Add a layer of mexican rice. Add additional layers of corn, lettuce and cheese. Top with salsa, guacamole, sour cream and tomatoes to taste. Low Fat alternative: Yield: 6 tostadas |
